Granola with Pecans & Cranberries

  • IMG_19606 c old-fashioned oats
  • 1/2 tsp salt
  • 2/3 c vegetable oil
  • 1/2 c honey
  • 2 T vanilla
  • 2/3 c chopped pecans
  • 1/4 c flax seed
  • 1 c dried coconut
  • 2/3 c dried cranberries
  1. Preheat oven to 350º.
  2. Mix all ingredients, except cranberries, together in a mixing bowl.
  3. Spread mixture on a silicone baking mat on a cookie sheet.
  4. Bake mixture for 15 minutes, stirring once in the middle of cooking.
  5. Remove granola from the oven, and stir. Let cool for 2-3 minutes. Add fruit in and stir to combine.
