What to do when you have too many Pineapple…..

I suddenly discovered that I had neglected to keep an eye on the underripe pineapples that I bought last weekend and suddenly I had two overripe pineapples.

I tried two recipes; pineapple cake and pineapple cordial.  I had one success………the cordial.  Let’s not discuss the cake except to say that the hens seemed to enjoy it.

Pineapple Cordial modified from a recipe by Sally Wise 

1.5 fresh pineapples; cores and flesh (about 6 cups)
2 cups water
The juice and zest of 1 large lemon

Place the pineapple pieces into a food processor.  Process until the mixture is quite fine.  Pour the pineapple into a saucepan and add the water.  Bring to the boil and simmer for 15 minutes. Strain though two layers of cheesecloth pressing down to extract the maximum amount juice.

Sugar (1 cup per cup of liquid)
2 teaspoons citric acid

   To each cup of liquid (there will be about 3 cups) add 1 cup of sugar.  Bring the mixture to a boil and simmer for one minute.  Remove from heat and stir in the lemon juice, zest and the citric acid.  Cool and strain into bottles. Store in the refrigerator.

To serve use one part syrup to 4 parts water.

This also makes a great glaze for ham when combined with some brown sugar.
