Garlic and Herb Roasted Turkey

14-18 pound turkey
1 head garlic – minced
1 T extra virgin olive oil
2 T fresh oregano – chopped
2 T fresh rosemary – chopped
2 T fresh thyme – chopped
1 T fresh lemon zest
1 T ground black pepper
2 t kosher salt

Mix the ingredients together and rub the turkey with it inside and out.

Another picture I forgot to take until it was too late.

 

 

Roast 1 hour at 375 degrees then lower the temperature to 325 degrees and roast until the thigh registers 175 degrees.
