Stuffed Boneless Breast of Turkey

Stuffing (measurements are estimated)

  • 2 celery stalks chopped
  • 1/2 onion chopped
  • 1 small bulb fennel chopped
  • 1 Tablespoon butter
  • 2 fresh eggs
  • 1/3 cup chicken stock
  • 3 cups bread crumbs
  • 1 teaspoon dried sage
  • 2 teaspoons fresh rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Saute vegetables in butter until tender. Combine with bread, eggs, stock and seasonings.  Cool.

Remove bones from a half turkey breast and pound to about 1/2″ – 3/4″ thick.  Top with stuffing and roll.  Use string to tie roll and place seam down into a roasting pan.  Roast at 350 degrees  for about. 90 minutes. Extra stuffing can be baked separately
