December 3-10

December 6:

Tonight when I stopped by the local market they were clearing out dairy products; cream was $.25 per pint and goat milk was $1.00 per quart.  I put the goat milk in the freezer and decided to order some items to make goat milk soap and lotion.  Tonight I made a kefir sour cream and creame fraiche.

Sour Cream: Mix the ingredients and let sit in a warm area until thickened (12 -24 hours).  I cover mine with a thin cotton cloth.

  • 2 cups of milk
  • 1 cups of cream
  • 1/4 cup of kefir
  • 1/2 t salt

Creame Fraiche:  heat the cream to 163 degrees in the microwave and let it set for 1/2 hour.  Cool to 88-95 degree and add yogurt.  Let set in a warm place for up to 3 days.

  • 2 cups cream
  • 4 T yogurt

December 4:

This was a pretty quiet weekend which was nice.   Right now most of the animals are napping in front of the fire.  Bentley (in the foreground) is limping pretty badly on his front paw so we brought him inside to keep him calmer.  Mishka, the jealous one, has to go wherever Bentley gets to go so he’s in too.  Suzuki, the cat in the chair, is just happy they’re both in which keeps the other cat, Percy, away.

Yesterday, everyone was so tired that we all slept in until after 9:00 in the morning. It seemed like the day was half over at that point. I cleaned out the fridge and made some snacks in the process:

  • quiche in muffin tins with jalapeno cheddar and ham.
  • spaghetti muffins with leftover spaghetti, andouille sausage and pancake batter.
  • kefir milk rolls with cheddar and prosciutto.
  • kefir milk rolls with dark chocolate and butterscotch chips.

In the afternoon I canned sweet potatoes
